Muffin Fun Run/Walk Recipe

The history of this recipe is that local triathlete Rhonda Radench brought it over from Australia or New Zealand or somewhere far away like that and shared it with Lee-ann Nessman. Lee-ann would make a big batch and use them to refuel everyone at the Musreau Lake Triathlon Training Camps held during the summer.... here it is!

Dry Stuff
- 2 cups flour, 1 cup sugar, 2 tsp baking soda, 2 tsp cinnamon, ½ tsp salt

Wet Stuff
- 3 eggs, 1/2 cup oil, 2 tsp vanilla

Everything Else
- 2 cups grated carrot, ½ cup raisins, ½ cup nuts, ½ cup coconut, 1 apple grated, handful of chocolate chips, dates chopped, etc.

- 350 degree oven

Mix the dry stuff together, then beat the wet stuff together, then mix them both together..... then chuck everything else in... you can experiment with the everything else depending on what you have in the pantry.... put into muffin tins and bake for about 20 mins... eat and enjoy!!
